They can make as many deposits as they want, up to $100 maximum. This ‘bribe’ from a customer, who is then required to pay a portion of his bill at the end of the meal, is an excellent incentive for the server and also serves to keep the customer happy, because by the time they get home, their bill will still be less than what they would have paid with the credit card in the first place.
